'Rasmalai' or 'Rossomalai' with Rabdi

Rasmalai is an indian dessert which is also described as "rich cheesecake"(without crust),where 'ras' means juice and 'malai'means cream.

Ingredients:-
  • For rabdi-
      1liter milk (3 cups full fat)
         ½ cup sugar for rabri
         A pinch of Saffron or kesar(optional)
         2 tbsp pista or almonds sliced

For rasmalai-
       1litre of milk 
           1 to 2 tbsp lemon juice or vinegar (mix with 2              to 3 tbsp water) or 4 to 6 tbsp curd
           1 liter ice water or ice cubes
            4cups of water 
            1cup of sugar  
            1tsp of corn flour

Instructions:-
For Rasmalai-

Take a pan with heavy bottom.  Pour 1litre of milk in it and bring it to boil .
Turn off the flame and wait for 2-3mins to bring down temperature a little bit.
Now add lemon juice or vinegar to the milk and stir it until the milk has curdled completely.
Now add some icecubes or ice water to the pan and wait for 2minutes.
Using a strainer drain the water and collect the chena.
Rinse it under tap water so that there's no trace of lemon juice in it.
Leave it in the strainer for 10-15 minutes and then take the chena in your hand and squeeze out remaining water slowly.
Add cornflour and start mashing the chena till it’s smooth. Make balls of chhena
Now for sugar sugar syrup,take another pan.Add 1cup of sugar and 4cup of water into it .Boil it completely.
Add those balls into sugar syrup for 20-25mins until balls get double in their sizes.Then take out those balls out of the syrup and drop them into fresh water.

For rabri/rabdi-

Take another pan with heavy bottom.Pour 1litre of milk into it and boil.Add sugar and Saffron when milk comes to boil.
Boil the milk on medium flame until it gets half in quantity.
Keep it in fridge .


Now add those rasmalai balls to the rabdi and garnish it with chopped pistachio and almonds.
